My wife and I import from Italy (because we can’t get it anywhere else! - that’s how local it is) about 80lbs per year in 12lb wheels, JUST FOR US. That’s how much we love it. But the euro is killing us and the price of the cheese has increased 50%. Add the shipping to that which is equal to the cheese, and it is extremely expensive as a “treat”. So we try to go easy on it, but it’s soooooo goooooooooodddd…….

By the way… if you could recommend a link of the kind of cheese slicer you mean, I’d love to look at it. I have the kind that is wired and designed to cut soft cheese like mozzarella, but I haven’t found anything else that works for this very very hard cheese. BTW, did you know that this cheese, although of the parmigiano family actually does not melt, even if grated? Have you ever tried this cheese? Stravecchio, or Vecchio, from PIAVE. It … well nothing beats this cheese.

Brycat - Thanks! We have one of those big putty-knife cheese cutters that go with this very hard cheese. We also have one of those other cheese knives that look like a mini ghurka … thing. But what the cook knife does that none of the others we have tried can do, is allow me to slice from that chunk you saw, very thin slices. We had a very expensive Japanese knife that was sharp on both edges (this is one-sided) and it was heaven for cutting cheese). I really appreciate your comment. Thanks!

Thats excellent service, as a professional Chef for a hotel, its nice to be able to get that kind of action when one of your cutlery malfunctions. May I suggest a cheese slicer for future fromage endeavors,I find them to be a bit more accurate then using a knife. okay thats my two cents, I apologize, I always enjoy your video’s by the way.
